
Christmas at Tonkotsu
Try our Christmas special, the Christmas-spiced Duck Mazesoba Ramen, available until 1st January.
For this special, we’re using special wide-cut noodles for a Mazesoba ramen. In Japanese, “Maze” means “to mix”, and “soba” means “noodles”. The noodles are thicker and chewier than our classic noodles, and we add less broth than our regular ramen. Mix it all together and you’ve got yourself a deliciously rich flavour explosion with every mouthful.
The wide-cut noodles sit in our pork broth enriched with lardo and is seasoned with a soy sauce base. We cook the duck leg for more than six hours in a marinade of ginger, cloves, star anise, soy sauce, sake and mirin, before crisping the skin in the fryer and covering in a sticky Christmas-spiced glaze. Crispy onions add some crunch and pickled radish and pomegranate seeds add freshness. A Clarence Court egg yolk completes the dish.
