
Homemade is best
All five of the main parts of ramen – noodles, stock, base, toppings, fat – are so important than we make them ourselves.
We cook our tonkotsu broth for hours and hours to give the rich, intense flavour from the pork, vegetables and kombu. We cook whole chickens and vegetables for our chicken broth, it’s lighter but packed with flavour. Our vegetable broth is made fresh every morning, with lots of mushrooms for a deep umami flavour.
