KRICKET X TONKOTSU COLLABORATION RAMEN
We’ve teamed up with the legends from Kricket for our new special, bringing the flavour and heat of Southern India to our signature dish, cooking up a Pandhi pork curry ramen, available at all Tonkotsu restaurants from today.
A Pandhi curry is from South India and is known for its sweet and sour flavours, which Will and Ken have matched up perfectly with our Tonkotsu broth and thin-cut noodles.
The spice blend has a mix of cumin and mustard seeds as well as cinnamon, cloves and star anise, which we make into a base for our ramen before adding our tonkotsu broth. We then use the same spices alongside chilli, tamarind and coconut milk to marinate and cook diced pork belly that tops the noodles. The ramen is finished off with crispy-fried ginger and curry leaves, and pickled fennel and chilli to cut through the rich flavours, and of course half a soy-marinated Clarence Court egg.
